Head chef Wade Holding has been cooking up a storm in leading regional eateries for many years now, garnering a strong following of foodies who are drawn to his deft touch with locally sourced produce and a passion for simply matched flavours.
The intimately styled setting of the Red Earth Dining Room makes a perfect backdrop for romantic dinners between couples, special family celebrations, large group bookings, or private functions that take advantage of the whole restaurant space, ambient grand piano and alfresco entertaining area.
Varietal wines from nearby growing regions of Orange, Mudgee and the Hunter Valley team have been carefully matched to Wade’s elegant menus, alongside a selection of fine liqueurs, spirits and aperitifs expertly mixed at the cosy Piano Bar.

Red Earth Dining is open for dinner six nights a week, from 6 to 9pm, Monday to Saturday (closed on Public Holidays).
Continental buffet breakfast can also be taken from 7am to 9am daily.
